The production of lactic acid helps drive a rapid reduction in pH, which is a critical factor in preserving silage, protecting dry matter content and maintaining feed value.
Homofermentative LAB are recognised for their efficiency in converting plant sugars into lactic acid.
Compared to heterofermentative bacteria, they produce:
- Twice as much lactic acid from glucose
- Up to six times as much lactic acid from fructose
