Who We Are

Peter Burke
MVB, Cert Dairy Herd Health
Principal and Veterinary Surgeon
Originally from Caherconlish, Peter is the Principal Vet at East Limerick Vets and a proud 2002 UCD graduate. With a strong interest in preventative animal health, Peter is passionate about helping animals live healthier, happier lives through proactive care and expert treatment.
He enjoys working with all species — large and small — and has been providing veterinary services to the Caherconlish community since 2011. Outside of the clinic, Peter looks after his own herd of cattle and enjoys following horse racing. His family recently welcomed a new addition — a dog named Geoff, who keeps everyone on their toes!

Rosaleen Scanlon
Veterinary Surgeon (Small Animals)
Rosaleen (Roz) graduated from Glasgow University in 2008 with a degree in Veterinary Medicine. Before joining East Limerick Vets, she gained extensive experience working in a variety of small animal practices, both as a permanent and locum vet, developing strong skills across all areas of companion animal care.

Since joining the East Limerick Vets team in 2020, Roz has enjoyed caring for pets and their owners in the local community. She takes a particular interest in preventative healthcare, internal medicine, and soft tissue surgery, ensuring every patient receives the highest standard of care.
Outside of work, Roz enjoys hiking, travelling, and skiing, often combining her love of adventure with her passion for animals.

Giorgio Murari
DVM
Veterinary Surgeon
Giorgio graduated in Veterinary Medicine from the University of Bologna, Italy, in 1988. With decades of experience, he has dedicated much of his career to cattle medicine and herd health, bringing a wealth of knowledge and hands-on expertise to the East Limerick Vets team.
Before moving to Ireland, Giorgio worked for the National Farmers Association in Italy for many years, supporting farmers in improving livestock health and management. He later established himself as a freelance large-animal practitioner, combining clinical work with his passion for farm life.
A lifelong farmer himself, Giorgio once ran a Saanen dairy goat farm, where he personally milked his goats and produced artisan cheese from their milk. He moved to Ireland in 2019, though he still fondly remembers his loyal dog Joe and his two donkeys back home in Italy.

Aoife O'Connor Keogh
Veterinary Nursing Assistant | Receptionist
Aoife joined the East Limerick Vets team in February 2022. She comes from a dairy and beef farming background, so she’s been around animals all her life and has a real passion for looking after them.
You’ll usually find Aoife up front at reception or lending a hand with the animals behind the scenes. She loves getting to know our clients and their pets — and always makes sure everyone gets a warm welcome when they come through the door.
Outside of work, Aoife’s mad about horses and plays polocrosse whenever she can. At home, she’s kept busy with her own furry crew — a dog, a few cats, and a rabbit.

My Story
Kay Bateman
Veterinary Nursing Assistant | Receptionist
Kay joined the East Limerick Vets team in October 2024 and has quickly become a friendly and familiar face around the clinic. Coming from a dairy farming background, Kay has always had a love for animals and enjoys being part of a team that cares for them every day.
At home, she has two dogs and a cat who keep her on her toes. When she’s not at work, Kay loves travelling, heading to the cinema, and catching up with friends.
